We own a coffee shop in a small town. We also serve pastries and do a sandwich/soup lunch. We've been approached by a couple of people about "subletting" so that they can sell breakfast tacos or doughnuts out of our place. This proposal is fine with us but we were looking for advice on how to best go about this. Should we simply charge rent? Go consignment? Split costs and profits on their items sold? If there's any sort of standard procedure on this or if you have any advice it'd be much appreciated. Thanks.
