What is FS Prep?
The FS Prep Instructional Resource is a two-year comprehensive culinary and foodservice instructional resource including daily lesson plans, lab and lecture guides, supplementary materials, tests and quizzes; all in modular and electronic format.
The course content and minimum competency requirements complement and help fulfill Texas Education Agency (TEA) Texas Essential Knowledge and Skills (TEKS) and Workforce Education Course Materials (WECM) requirements. This will encourage and provide the student with tools for continuing post-secondary foodservice education.

FS Prep aligns with Advanced Technical Credit (ATC) program for:
Family and Consumer Science; Food Production Management Service I & II and Culinary Arts I & II
and also aligns with Trade and Industry; Culinary Arts I & II
Students are eligible for up to three certifications through FS Prep
Texas Chefs Association (TCA) Professional Certification
Certificate of completion from TRAEF
SERVSAFE
FS Prep is the only high school culinary curriculum that offers ServSafe Certification
Students are eligible to take the ServSafe exam
Payment is up to school or district
Instructors must be ServSafe certified to the teach course
ServSafe can be offered by local universities depending on the city
Certification is good for 5 years. After 5 years, the students can take continuing Ed units and submit them every 5 years
The TRA Education Foundation offers Servsafe teacher training
Once exam is passed, the individual can take certification to their municipal health department. They will charge a small fee. (Depends on city.)
Does my school qualify for the FS Prep Program?
An ideal candidate for FS Prep has:
An existing culinary arts program in place
A demonstration kitchen containing industrial equipment
A supportive administration
What if my school does not have a commercial kitchen?
Any school can incorporate ServSafe Certification Training within a classroom setting
Obtain ServSafe Teacher training certification
Contact the TRA office to order ServSafe Materials
If working toward acquiring a commercial kitchen, download the 'Making the Transition' guide and work with your local TRA chapter to assist you in building an adequate facility and build community support
